This refreshing broccoli-apple-date salad combines crunchy broccoli, sweet dates, and fresh herbs for a vibrant dish. Recipe by thehungrywarrior

Ingredients

Salad:

  • 400 g broccoli florets (300 g without stalk)
  • 1 large apple, cut into fine strips
  • 60 g roasted hazelnuts
  • 15 g fresh mint and dill
  • 80 g plant-based feta alternative, crumbled
  • 70 g dates

Dressing:

  • 2 tsp Dijon mustard (heaped)
  • 2 tsp maple syrup (or similar sweetener)
  • 50 ml white balsamic vinegar
  • 30 ml olive oil
  • Salt and freshly ground black pepper

Preparation

  1. Remove the stalk of the broccoli and use it for something else.
  2. Cut the apple into fine strips, roughly chop the roasted hazelnuts, finely chop the herbs, crumble the feta alternative with your fingers and dice the dates. Place everything in a large bowl.
  3. For the dressing, put the Dijon mustard, maple syrup and balsamic vinegar in a small bowl and mix. Slowly add the olive oil, stirring until a creamy consistency is achieved.
  4. Season with salt and pepper.
  5. Pour the dressing over the salad and mix well.

Tip: If you like the salad juicier, you can double the dressing.
