Recipe: Broccoli-Date Salad

Ingredients
Salad:
- 400 g broccoli florets (300 g without stalk)
- 1 large apple, cut into fine strips
- 60 g roasted hazelnuts
- 15 g fresh mint and dill
- 80 g plant-based feta alternative, crumbled
- 70 g dates
Dressing:
- 2 tsp Dijon mustard (heaped)
- 2 tsp maple syrup (or similar sweetener)
- 50 ml white balsamic vinegar
- 30 ml olive oil
- Salt and freshly ground black pepper
Preparation
- Remove the stalk of the broccoli and use it for something else.
- Cut the apple into fine strips, roughly chop the roasted hazelnuts, finely chop the herbs, crumble the feta alternative with your fingers and dice the dates. Place everything in a large bowl.
- For the dressing, put the Dijon mustard, maple syrup and balsamic vinegar in a small bowl and mix. Slowly add the olive oil, stirring until a creamy consistency is achieved.
- Season with salt and pepper.
- Pour the dressing over the salad and mix well.
Tip: If you like the salad juicier, you can double the dressing.
