Recipe: Pea soup with cashews

Our cashews make this warming soup wonderfully creamy. Try it! Recipe from The Golden Gut.

Ingredients

  • 1 handful of cashews (whole or broken)
  • 300 g frozen peas
  • 250 g courgette
  • 300 ml chicken broth, ideally homemade
  • hemp seeds
  • olive oil

Preparation

  1. Soak the cashews for at least 4 hours.
  2. Cut the courgettes coarsely and steam them together with the peas. Season with a little salt.
  3. Rinse the cashew nuts and leave them to drain.
  4. Puree the vegetables, cashew nuts, broth and a little salt in a pan.
  5. Serve the soup in two bowls, add a dash of olive oil and sprinkle with hemp seeds.

Instead of soaked cashews, you can also add a tablespoon of cashew butter to the soup. A little wild garlic butter will enhance the flavour.
