Recipe: Miso Date Paste

Ingredients:
- About 15 pitted dates
- 2 tbsp liquid coconut oil
- 1 tsp miso paste
- 1 tsp Bourbon vanilla extract
Instructions:
- Soak the dates in lukewarm water for 20-30 minutes.
- Drain the dates, saving the soaking water. Place them in a bowl with the coconut oil, miso paste, vanilla and 3-4 tablespoons of the soaking water.
- Blend until you get a smooth, creamy paste.
The mixture can be stored in the refrigerator for several days.
You can use this paste as a sweet spread or as a topping for various desserts.
