Fancy a creamy, sweet spread that's completely plant-based? Here's a recipe you can make in no time at all. Recipe by Aurelie, @feedmykid

Ingredients:

  • About 15 pitted dates
  • 2 tbsp liquid coconut oil
  • 1 tsp miso paste
  • 1 tsp Bourbon vanilla extract


Instructions:

  1. Soak the dates in lukewarm water for 20-30 minutes.
  2. Drain the dates, saving the soaking water. Place them in a bowl with the coconut oil, miso paste, vanilla and 3-4 tablespoons of the soaking water.
  3. Blend until you get a smooth, creamy paste.

The mixture can be stored in the refrigerator for several days.

You can use this paste as a sweet spread or as a topping for various desserts.
