Feel like something spicy? Try this colourful rice noodle salad inspired by Asian kitchen, with a spicy cashew dressing. Recipe by Shabnam Rebo, The Hungry Warrior

Asiatischer Nudelsalat mit scharfem Cashewdressing

Ingredients for 3 -4 servings:

  • 90 g broken or whole cashews
  • 140 g (6 tbsp) cashew butter
  • 4 tbsp lime or lemon juice
  • About 4 tsp harissa or gochujang paste, depending on how spicy you want it
  • 1/2 tsp paprika (smoked, mild or spicy)
  • 150 ml water
  • Salt
  • 1 small garlic clove
  • 1 tbsp olive oil
  • 150 g rice noodles
  • 130 g carrots
  • 100 g red cabbage
  • 150 g cucumber
  • 1-2 spring onions
  • 1⁄2 mango
  • 30 g roasted peanuts
  • Thai basil to taste
  • Chilli to taste

Instructions:

  1. Soak the cashews in hot water for about 20 minutes.
  2. Drain the cashews and blend with the rest of the dressing ingredients in a stand mixer or with a stick blender in a tall container until creamy.
  3. Meanwhile, prepare the salad: Grate the carrots and red cabbage, dice the cucumber, finely chop the spring onion and julienne the mango into small strips. Tear the leaves off the Thai basil and add as many as you like.
  4. Cook the noodles according to the instructions on the packet, rinse in cold water and drain well.
  5. Place everything in a bowl, stir in the dressing and serve.
