Recipe: Protein bowl with hummus

This colourful bowl with lots of veggies and protein is full of flavour. The homemade hummus is a highlight. Recipe by Shiruna from My Elephant Kitchen

Ingredients for one bowl:

  • 1 cup Spinach
  • 1 tsp Olive Oil
  • 1/4 cup Onion
  • 1/4 cup Cabbage
  • 150g Tofu
  • 1/4 tsp Sea Salt
  • 1/2 tsp Flax Seeds
  • 5-6 slices of Cucumber
  • 1/2 cup Cauliflower
  • 5-6 Cherry Tomatoes
  • 3 tbsp Hummus (see recipe)
  • 2 tbsp Edamame
  • 1/2 cup Microgreens
  • 1 tsp Sesame Seeds (mixed)


  1. Heat up the oil in a pan and fry the onion until it's translucent. Mix in the cabbage and cook for 2 minutes.
  2. Add the tofu and flax seeds and cook for another 2 minutes.
  3. Blanche Cauliflower in water until it's soft. You can add some turmeric to the water to make the cauliflower golden!
  4. Now start assembling the bowl. Add the spinach, the fried mix, cucumber slices, blanched cauliflower, cherry tomatoes, hummus, and edamame.
  5. Dress with sprouts and sesame seeds.
