Recipe: Pulled Jackfruit Burger
Fast food with selected ingredients: jackfruit is transformed into a vegetarian version of pulled pork. Recipe by Laura Grotenrath, Zero Waste Your Life

Ingredients (per person)
Burger
- 200 g of canned jackfruit
- Paprika powder, salt, sugar
- Oil for frying
- BBQ sauce (ready-made or homemade)
- Burger bun
- Onion, tomato and cucumber slices, lettuce
- Ketchup, mustard, vegan mayonnaise
Homemade Fries
- 2 large potatoes
- Salt, pepper, paprika,
- Vegetable oil
Preparation
- Wash the potatoes and cut them into sticks.
- Season the potato sticks with salt, pepper, paprika and oil.
- Bake in the oven at 180 degrees for around 20-30 minutes, flipping them halfway through. The fries are crispest when they are only in one layer on the baking sheet.
- Tear the jackfruit with your hands or a fork, then marinate it with paprika, some salt and sugar for 15 minutes.
- Sear the jackfruit in oil for 10-15 minutes.
- Mix the seared jackfruit with 30-50 ml BBQ sauce.
- Cover the burger bun with pulled jackfruit and toppings (onion, tomato and cucumber slices, lettuce, ketchup, mustard, vegan mayonnaise).
- Serve the burger with fries and enjoy.
