Recipe: Vegan Tacos with Jackfruit Carnitas
Tacos de carnitas without any meat? You bet! With pulled jackfruit and the right spices, they are almost indistinguishable from the original. Recipe from Corinna Frei, Schüsselglück

Ingredients
Corn tortillas
Pulled Jackfruit
- 1 can of jackfruit in brine
- 1 small onion
- 2 garlic cloves
- 1 tbsp tomato purée
- 2 tsp vegetable oil (i.e. sunflower oil)
- Spice mix:
- 1 tsp chili
- 1/2 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp oregano
- 1 pinch of salt (optional)
- 100 ml water
- 1 to 2 tsp lime juice
Toppings
- Pico de Gallo (tomato salsa)
- Avocado slices
- Fresh coriander, chopped
Preparation
- Drain the jackfruit through a sieve and tear it into pieces with your hands. Prepare the spice mix in a bowl and set it aside.
- Dice the onion and chop the garlic. Fry them in a pan with oil over medium heat. Add the tomato puree and fry everything for about a minute. Add the chopped jackfruit and the spices and fry the whole thing again for a few minutes. Add the water and boil the mixture until most of the liquid has evaporated. Add lime juice to taste.
- Heat the tortillas in a pan without oil and fill them with the jackfruit carnitas and toppings of your choice.
