Dried cashew apples aren’t just for snacking – they’re great for cooking too. This dip is a brilliant vegan alternative to mayonnaise and pairs well with a variety of dishes. Recipe by Michaela Frank, head chef from Zurich.

Preparation

  1. Soak the cashews and dried cashew apple in water overnight.
  2. Drain and blend together into a smooth cream.
  3. Slowly mix in the oil – just like you would with mayonnaise.
  4. Add a splash of vinegar to taste.
  5. Season with salt and pepper as desired.
