Recipe: Cashew Apple Cream
Dried cashew apples aren’t just for snacking – they’re great for cooking too. This dip is a brilliant vegan alternative to mayonnaise and pairs well with a variety of dishes. Recipe by Michaela Frank, head chef from Zurich.

Ingredients
- 50g cashews
- 100g dried cashew apple
- 100g plant-based oil
- 50g vinegar
- Salt and pepper
Preparation
- Soak the cashews and dried cashew apple in water overnight.
- Drain and blend together into a smooth cream.
- Slowly mix in the oil – just like you would with mayonnaise.
- Add a splash of vinegar to taste.
- Season with salt and pepper as desired.
