Recipe: Sweet Fonio Porridge
Together with cinnamon, cardamom and nutmeg, the fonio here turns into a sweet porridge with nutty flavours. The recipe is vegan and gluten-free. Recipe by Shiruna, My Elephant Kitchen

Ingredients
- 100 g Fonio
- 200 g Water
- 200 g Almond milk or any milk of your choice
- 11⁄2 tbsp Erythritol or sugar
- 1/ 3 tsp Cinnamon powder
- 1⁄4 tsp Cardamom powder
- 1⁄4 tsp Nutmeg powder
- 1⁄4 tsp Vanilla essence
- 1 tbsp Cocoa Nibs
- 1⁄2 big Orange
Instructions
- Wash and soak fonio in a bowl of warm water for 5 minutes and then sieve.
- Add the soaked fonio, water, milk, and erythritol to a heavy bottom pan. Mix in the cinnamon, cardamom, nutmeg, and vanilla (optional).
- Cook on medium-high heat for 8-10 minutes and stir continuously. You can add an additional 50-100 ml of milk if you like it a bit runny.
- Transfer the porridge to a bowl and top it up with cocoa nibs and orange!
