Recipe: Oven-Baked Squash

A savoury side dish for autumn and winter. Balsamic vinegar and honey perfectly enhance the flavour of the squash. Recipe by Regula Schneider, farmer at the Schore organic farm

Ingredients for 4 servings:

  • Approx. 800 g Bush Delicata or other squash, seeds removed (Bush Delicata has a tender, edible skin)
  • 1 large onion
  • 4 tbsp balsamic vinegar
  • 4 tbsp olive oil
  • 1 tbsp honey
  • Salt and pepper

Instructions:

  1. Pre-heat the oven to 220°C on convection.
  2. Cut the squash into 3 cm cubes and place in a bowl.
  3. Slice the onion and add to the squash in the bowl.
  4. Stir together the balsamic vinegar, olive oil and honey. Add salt and pepper to taste.
  5. Pour half of this mixture over the squash and onions and mix well.
  6. Spread onto a baking tray and place in the oven.
  7. After 20 minutes, pour the remaining olive oil-balsamic vinegar mixture over the squash and bake for another 10 minutes.
