Recipe: Oven-Baked Squash
A savoury side dish for autumn and winter. Balsamic vinegar and honey perfectly enhance the flavour of the squash. Recipe by Regula Schneider, farmer at the Schore organic farm
Ingredients for 4 servings:
- Approx. 800 g Bush Delicata or other squash, seeds removed (Bush Delicata has a tender, edible skin)
- 1 large onion
- 4 tbsp balsamic vinegar
- 4 tbsp olive oil
- 1 tbsp honey
- Salt and pepper
Instructions:
- Pre-heat the oven to 220°C on convection.
- Cut the squash into 3 cm cubes and place in a bowl.
- Slice the onion and add to the squash in the bowl.
- Stir together the balsamic vinegar, olive oil and honey. Add salt and pepper to taste.
- Pour half of this mixture over the squash and onions and mix well.
- Spread onto a baking tray and place in the oven.
- After 20 minutes, pour the remaining olive oil-balsamic vinegar mixture over the squash and bake for another 10 minutes.
