Recipe: Vegan Fonio Pizza
Can you make a pizza dough with fonio?! Moana Werschler from Miss Broccoli shows us that it's possible!

Ingredients for 1 round baking tray
- 200 g white fonio
- 4 dl water
- A little salt
- 1 tbsp olive oil
For the topping
- 100 g vegan mozzarella or homemade: mix 100 g vegan skyr with 1⁄2 tsp salt and 1 tbsp oats and add one spoonful onto the tomato sauce
- 200 ml tomato sauce
- Vegetables, capers, olives according to taste
Preparation
- Boil the fonio in water with a little salt and allow to simmer for around 10 minutes until the fonio becomes thick. Mix in olive oil.
- Place baking paper onto the baking tray and spread on the fonio around 1.5 cm thick. Leave to cool.
- As soon as it is cool, spread the tomato sauce onto the fonio base almost to the edge.
- Top with vegetables and vegan cheese.
- Bake at 200°C for around 15-20 minutes.
