Recipe: Sweet Vanilla Fonio
The recipe is from Martin, former employee at gebana. He's from Benin, where he learned how to cook with Fonio. The milk porridge is somewhat similar to porridge and makes a delicious breakfast, snack or light supper.

Ingredients (for 2 to 3 people)
- 120 g fonio
- 300 ml water
- 1 vanilla bean (seeds and pod)
- 50 g sugar
- 100 ml milk
Instructions
- Pour the water over the fonio. Stir the fonio with a spoon or ladle until each grain is moistened.
- Add the vanilla bean and heat the mixture. Simmer on low to medium heat for 10-15 minutes until thickened and the water has nearly cooked off.
- Remove the vanilla bean. Add the sugar and milk. Simmer again for about 5-10 minutes. Remove from heat and leave to rest for 5 minutes, allowing the steam to escape.
- The fonio is now ready and can be served as you like with bread, biscuits or nuts.
