Recipe: Kiwi and Vanilla Compote
Vanilla and kiwi? A great combination! How to turn them into a delicious compote. Recipe by Sarah-Vanessa Schneider, Velvet & Vinegar

Ingredients for a 500 g jar:
- 1 kg kiwis
- 3-4 tbsp vanilla sugar or granulated sugar
- 2 vanilla pods
- Juice of 1 lemon
Preparation:
- Peel the kiwis and cut into cubes.
- Cut open the vanilla pods lengthwise and scratch out the core.
- Add all ingredients into a pan (including the cored vanilla pods) and briefly bring to the boil.
- Leave to simmer on a medium heat until almost all the liquid has evaporated. This can take 40 to 60 minutes.
- In the meantime, sterilise the jar for 10 minutes in boiling water and leave to dry.
- Fill the kiwi and vanilla compote into the sterilised jar and seal straight away.
Note: You can also use other spices instead of vanilla. Bananas can also be added. If you prefer it less sour, you can use more sugar.
Serving ideas:
- As a topping on muesli, porridge, overnight oats, semolina or rice pudding
- With yoghurt or quark, or beautifully layered in a glass
- Simply as a spread
- As the top layer on a cheesecake – perhaps thickening a little with agar-agar
- As a chilled dessert with fresh pieces of kiwi
- Mixed in smoothies or smoothie bowls
