Recipe: Ginger Marmalade

This sweet and spicy marmalade only has two ingredients and is full of flavour. It works excellently as an addition to cheese or meat or as extra flavouring in a sweet dish. By Doris from Cannelle Rebelle

Ingredients for 2 250ml jars:

Instructions:

  1. Peel the ginger and cut into small pieces.
  2. Cook the ginger in boiling water for 30 minutes.
  3. Pour off the water and save it for another use, such as for tea or as a ginger beverage.
  4. Return the ginger to the pot, cover with fresh water and add the sugar.
  5. Cover, reduce the heat and simmer for around one hour. Remove from heat and leave it to steep overnight
  6. The next day, bring it to a boil again, reduce the heat and allow to simmer for one hour
  7. You can either purée the mixture or leave the pieces whole if you prefer a chunky texture
  8. Ladle into sterilised jars and store in the refrigerator.
  9. You can vary the recipe by adding rosemary, lemon or kumquat.
  10. For a slightly milder flavour, substitute apple for half of the ginger.
