Recipe: Water Melon Salad
The season for our Greek mini Modellino water melons is approaching! So, a good time to pick up a few recipes to try out this year. How practical it is that blogger Corinna Frei has several fantastic water melon recipes ready on her Schüsselglück food blog.

Water Melon Salad with Cucumber, Feta and Mint
Ingredients
- 2-3 mini water melons (approx. 2 kg)
- 1 cucumber (approx. 500 g)
- 1-3 red onions
- Fresh mint
- Fresh basil
For the dressing:
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 3 tbsp lime juice
- 1 tsp sea salt
- black pepper
- 150 g feta (from goat and sheep milk)
Preparation
- Peel the melon and cut into cubes; then put into a large bowl.
- Peel the cucumber, remove the seeds with a spoon, cut into smaller cubes and add to the melon.
- Peel the onions and cut into fine rings or strips. Add to the melon and cucumber.
- Wash the mint and basil and cut into strips. (Corina uses a lot of herbs here because she likes them, but 2 tablespoons of each herb would also be enough.) Set a small amount aside for decoration and add the rest into the bowl.
- Dice the feta and set aside.
- Mix the dressing ingredients in a small bowl and then add to the salad bowl.
- Mix together all the salad ingredients.
Taste and season if necessary: does it need some more acidity, sweetness or salt? Serve on a plate. Garnish with the feta cubes and the herbs you set aside earlier. Enjoy!
